With a passion for modern, fresh cooking, William’s bringing his version of South African cuisine to Mosaic Lagoon Cafe (in the historic 1892 Spookhuis) and at our luxury Lagoon Lodge, with a twist, of course.
Born in Mowbray, William grew up and attended school in Paarl where his family loved cooking for the local community. The Carolissen’s most popular dish, definitely his father’s potjie, William remembers, along with his mother’s traditional Cape dishes.
With these fond childhood memories of home-style cooking, William ventured into Franschhoek’s hospitality industry. Working his way from a part-time position in scullery during his high school days, he went on to complete his National Diploma in Hospitality at Cape Peninsula University.
In-service training at Le Ballon Rouge, where he was mentored by Steven Benson, followed on the heels of his studies, later working with renowned South African Chef, Reuben Riffel at Franschhoek Country House. The two continued their working relationship as William went on to work as an Executive Chef for Reuben for another seven years.
Career highlights include a trip to New York where he was part of the Martha
Stewart show, and a trip to Dubai where William cooked at the super luxurious Al Maha Desert Resort & Spa. Not only was the the opportunity a dream come true, but William was also able to see one of his favourite animals, the Arabian Oryx.
We’re thrilled to have William onboard at Mosaic Lagoon Cafe, and look forward to many gorgeous meals alongside the picturesque Hermanus Lagoon. While we may not be sporting Arabian Oryx, the sight of Southern Right Whales breaching in the waters of Walker Bay may just see these winter visitors becoming favourites of William’s.

We are so excited to announce the Mosaic Shop is now coming to the Stanford Village! We will open our doors on December 16th at the Street Market celebration, alongside the many lovely shops and restaurants in Stanford. Visitors will be treated to delights such as homemade jams, chutneys, syrups and baked goodies. You will find a large selection of fabulous organic Rain bath and spa products that we use throughout our Mosaic Rain Spa and our 5 star Lagoon Lodge accommodation. Our curios are sourced from throughout the African continent and include one of a kind African artifacts, quality handmade and designed jewelry, unique gift items, decorative housewares, gorgeous scarves for summer and winter and surprises for your little one.
An enthusiastic member of the Mosaic Team can also tell you about the fun that happens at Mosaic. You can book a divine treatment or two at our Mosaic Rain Spa or your activities: guided quad bike rides along fynbos trails and boat cruises, both of which can be combined with a delicious lunch at the Spookhuis or under ancient Milkwood trees on the lagoon edge. You can browse the old cheese cellar of the Spookhuis and select from a wide variety of wine, mostly from our Overberg Region.
Last but not least, since the owners are from Tennessee, the home of Jack Daniels, it is only right that the 1892 Spookhuis becomes a “Friend of Jack.” Both are “stories of craftsmanship using years as the chapters.” Join us for a tasting where you can choose between eight different unique blends of the famous Jack Daniel’s. Our project proposal was submitted to 110% Green, evaluated and selected as part of the vibrant network of municipalities and organizations building an economy that connects the well-being of our environment with the growth of our local economy. And, it is not all talk – our commitment requires action and reporting the impact to the economy.
MOSAIC is committed to clear alien vegetation on our land, grow organic vegetables for our hospitality food service and our staff, continue to participate in the Stanford Food Heroes program, use building techniques that creates a low carbon footprint, and install energy efficient fireplaces that use biomass pellets. Our Luxury Lagoon Lodge is an truly an exotic getaway, yet it places you in the midst of eloquence. All meals are provided including wine and spirits. Even more, land and water activities are including in your stay. The resort itself is wonderful. Stone and glass walls open onto private decks for spectacular mountain views situated near the Hermanus Lagoon and soft bedding lies under romantic netting. Each room has a bathtub large enough for 2 and a private outdoor shower for an African bush experience. Lagoon Lodge has only 5 chalets beautifully built safari style with stone and thatch harvested from Mosaic. Your stay is guaranteed to be a private experience, filled with first class food and breathtaking adventures. A king bed or two twins can be accommodated.
We offer 4 cottages for our residents. Each provide their own appeal in luxury and scenery, and each are self catered, giving you freedom and privacy for your getaway. Our largest living space is the Duminy Cottage, sleeping 9 people. This is perfect for families, featuring a double volume living/dining area with glass doors that open onto 2 large verandas and an upper deck with panoramic mountain and Hermanus lagoon views. Next, 4 lovely stone cottages are available on a different part of the reserve, surrounded by milkwood trees and fynbos gardens. Walker Bay Beach excursions are included as part of your stay at our Lagoon Lodge, and we can’t wait to show you the dunes! Beaches like Walker Bay are not simply not commonplace. If you desire to stay at one of our Cottages then you can easily reserve a beach excursion to your stay. We charge R 300 per person for a 1.5-2 hour adventure, and we most assuredly encourage you to partake. Also, note that the migration season for the whales is from June through December, so make sure to book stay with us during these months if you simply must see the whales!

Daytime activities here vary from kayaking and quad biking for the more active to relaxing lagoon cruises and sundowners along Mosaic’s spectacular 19km of Walker Bay coastline. You may also be fortunate enough to spot an endangered caracal on your way down to the historical and beautifully restored “Spookhuis”. Stories like these are often shared back at the lapa where the heated pool offers another vantage from which to survey the lagoon and keep an eye on the prolific local bird population. Return to your spacious suite in the evening down lantern-lit boardwalks. The five units are generously proportioned under high thatch roofs and each boasts its own private slice of Mosaic’s breathtaking views. Foldaway glass doors allow guests to take full advantage day and night. Beds are soft and comfortable and baths are large enough to accommodate two as are the outdoor showers. We’d recommend ordering a bottle of local wine to sip in the privacy of your suite too…best served under the glorious expanse of the star-filled South African sky.
